Verjus, the acidity that came before lemon
The juice of grapes picked before ripeness, pressed before any fermentation. A vine-born acidity — tartaric and malic — that seasoned European kitchens long before lemon, and that is finding its place again behind the bar, particularly in alcohol-free drinks.
